1 head of cauliflower, cleaned and cut into florets
1/2 onion, peeled and chopped into small even pieces
4 tablespoons olive oil
1/4 teaspoon chili flakes
1/2 teaspoon curry powder
3 tablespoons water
Salt to taste
PREPARATION
- Heat oil in a skillet over medium heat.
- Add chili flakes and curry powder and cook, stirring for 1 minute, until you smell the aroma of the curry.
- Add cauliflower and onion to the pan; cook, stirring for another 2 minutes.
- Reduce heat to low, add the water, stir, then cover the pan and cook for 8 minutes, stirring occasionally, until the cauliflower has softened.
Serves 3–4 as a side. Prep time, 5–10 minutes; cook time, approximately 10 minutes.
Cook’s note: Serve with steamed white rice, lentils, or over flatbread.
