INGREDIENTS
2 cups arugula leaves
1/2 cup walnuts
1/2 cup fresh parmesan cheese
1/2 cup olive oil
4 cloves garlic
1/2 teaspoon salt
Fresh pepper to taste
PREPARATION
- Toast the walnuts in a pan over medium high heat until lightly brown.
- In a food processor combine arugula, salt, walnuts, and garlic, while drizzling in the olive oil.
- Remove the mixture from the food processor and stir in parmesan cheese.
- Add fresh pepper to taste. Serve over pasta or roasted potatoes.
Makes 1 cup of pesto. Prep time, 15 minutes.
Cook’s note: To prepare pesto using the mortar and pestle method, combine nuts, salt, and garlic in a mortar, and grind until smooth. Add cheese and olive oil, and grind again until smooth. Finely chop arugula and add it to the mortar. Grind with other ingredients until smooth.
